About this winery
In 1791, the Miquel family acquired Château Cazal Viel. Today, the vineyard represents the largest independent estate in the Saint-Chinian appellation. Cultivated with passion by Henri, and his son Laurent, an 8th generation winemaker, these poor lands give birth to great wines of the Saint Chinian appellation and exceptional whites. Production notes
Parcel selection. North-South orientation. Night harvest. Pressing with juice selection. Clarification of the musts at low temperature. Fermentation under controlled temperature 14 - 17°C.
Tasting notes
On the olfactory level, we discover notes of white flesh fruits such as pear and peach and notes of subtly toasted flowers such as acacia and violet. On the palate, the attack is ample and powerful, with good acidity that gives a fresh and balanced wine.
