Domaine Millet is a family property created in the early 80's on the Marcault farm in Tonnerre by Philippe Millet and is now managed by his sons Paterne and Beaudoin. This Chablis vineyard is located in the northernmost wine-growing region of Burgundy where the climate is continental and the 4 seasons are well marked: winters are harsh, springs are freezing, summers are hot and autumns offer optimal ripening conditions for the grapes. The philosophy that drives us is simple: "The best wine will always be the logical continuation of a harvest with beautiful grapes picked at maturity". "Thus, since its creation, the estate has been run with the sole objective of obtaining quality, typicity and authenticity by working with nature and not against it. With this in mind, our quest is to discover the optimal environment for the grapes. Thus protective treatments are carried out after observation and used only when necessary. Samples of soil, shoots and leaves are taken in order to understand the physiology of the plant and to best meet its needs. Pruning is also carried out to control yields. Once we estimate that the grapes have reached full maturity, the harvest takes place in September or early October, depending on the vintage. Once the pressing is done, we vinify the juice only in stainless steel or enamelled steel vats in order to preserve the aromas of the Chablisian terroir. We are fortunate to work in collaboration with one of the best French oenologists, Mr. Jean-Pierre Rodolphe Lédé. With over 30 years of experience, he has given his advice all over the world and in the most prestigious Burgundy estates. It is therefore obvious that his eye, nose and palate allow us to get the best out of each vintage: finesse, elegance and freshness.
