The village of Pinet, whose Gallo-Roman origin of the name is PINETUM, is located north of the Thau Lagoon on these ancient lands. More than 2000 years ago, the vine was there, growing on the rocky soils of the hillsides of the Thau basin. Some plots of land have kept the same surface area and the same sunny exposure since that time. It is on these lands that a noble and sun-drenched grape variety grows, the PIQUEPOUL which is at the origin of the PICPOUL de PINET. It produces grapes with small oval and golden grapes. Floriane and Olivier AZAN, have owned the estate since 1981; they have elaborated, thanks to a judicious choice of vinification, typical products of this terroir : White wines in PDO and vins de pays, as well as red and rosé wines in vins de pays. Olivier Azan, specifies that his conviction in the management of an estate in organic agriculture was an evidence for him and when at the end of his training he decided to establish himself on the soil of Pinet, at the Domaine de Petit Roubié, he undertook to carry out this step; Thus, from 1985 the estate passes in organic agriculture.
