The Domaine du Deffends is a family property located at the foot of the Aurelian Mountains, near the Roman road of the same name. This vineyard cultivates today 15 hectares of vines on sunny clay-limestone hillsides at an altitude of 420 meters and is certified organic. This vineyard is run by a team of enthusiasts who strive to enhance the privileges of the soil and the climate through a rigorous quality policy, thus offering the wine lover the security of a product that goes directly from the cellar to the table, protected from handling and alterations. Appellation d'origine contrôlée Coteaux Varois, the estate is located on a limestone soil, poor and filtering. Thanks to a constant slope and its privileged east-south-east exposure, the vineyard has never suffered the effects of frost. Production is deliberately kept at a low level, in particular by short pruning and, if necessary, by early fruit removal.
