Champagne AYALA is one of the oldest Champagne Houses, established in Aÿ, in the heart of the Grand Crus, since its foundation more than 150 years ago. Independent and family-run, it represents today the archetype of the great House, producing high-flying wines, appreciated throughout the world for their freshness and elegance. Champagne AYALA has always belonged to independent family structures on a human scale. After the Second World War, the House experienced a quiet period in its history, with its directors occupying important roles within the Champagne interprofession. In 2005, the Bollinger family bought the beautiful property with the intention of restoring its noble reputation: a period of renewal began for Champagne AYALA, with a complete overhaul of the production tools and the arrival of new teams. The House now employs about fifteen people, preserving the family spirit of its origins. Champagne AYALA elaborates wines appreciated for their precision, their delicacy, their airiness and their style based on freshness and elegance. Well-balanced blends with a strong emphasis on chardonnay, vinification in small stainless steel tanks and low dosage: all these elements define the unique personality of the House's emblematic vintages.
