Christophe Baudry & Jean-Martin Dutour sign each of their bottles and guarantee the permanent search for a balance between the expression of the terroir, the vintage, and the durability of the particular style of each estate. Obviously, it all starts in the vineyard. Every detail counts: high trellising to increase the surface area of foliage exposed to the sun, grassing, careful disbudding, leaf thinning around the bunches, manual sorting on the vine stump before harvesting ... In the winery to preserve the integrity of the fruit as much as possible and to favour a slow infusion rather than a brutal extraction, the filling of the vats is done by gravity. At Panzoult, a bridge crane was even provided for when the winery was first fitted out in 2006 - which is unique in the region. Precise, gentle and long fermentation control without the addition of sulfur enables the aromatic construction to be mastered. While the Cabernet Franc grape variety finds its finest expression in the VAL DE LOIRE, where it is at the northern limit of its production area, Christophe Baudry and Jean-Martin Dutour do their utmost to bring it to perfect maturity and reveal its aromatic finesse and perfect aptitude for ageing.
