In 1987, Pascal, then a breeder merchant, created the brand "Pascal Jolivet". Pascal needed a better infrastructure to develop and make his own wine. He therefore invested in 1990 to create a cellar in Sancerre with a thermo-regulated stainless steel vat room inspired by the installations in Champagne. Product notes
A blend of 50% limestone, 30% clay-limestone, and 20% flint. From Bué, Verdigny, Saint Satur, and Sainte Gemme.
Production notes
Each grape is sorted upon arrival from the harvest. We work by gravity to respect the natural process of winemaking. We perform a gentle pressing and only keep the free-run juice and the heart of the press. Each grape origin is vinified separately in a temperature-controlled stainless steel tank.
Tasting notes
It is a wine with a unique and distinctive style of the house. A feminine wine, elegant with a perfect balance. Dry, with natural fruit and mineral notes. It is an excellent aperitif wine and pairs well with shellfish, both raw and cooked fish.
