About this winery

In 1987, Pascal, then a breeder merchant, created the brand "Pascal Jolivet". Pascal needed a better infrastructure to develop and make his own wine. He therefore invested in 1990 to create a cellar in Sancerre with a thermo-regulated stainless steel vat room inspired by the installations in Champagne. Production notes

Manual harvesting, whole cluster pressing. Light cold settling. 100% natural vinification in temperature-controlled stainless steel tanks, with aging for 9 months on fine lees, allowing us to neither fine nor filter the wine before bottling. Terroir: sandy soil with flint, old vines. Tracy-sur-Loire. West-facing slopes, across from the Loire

Tasting notes

It is a full-bodied, mineral, generous, and sharp wine. It pairs perfectly with grilled lobster, a citrus scallop carpaccio, and Bresse chicken with morels.
