About this winery

In 1987, Pascal, then a breeder merchant, created the brand "Pascal Jolivet". Pascal needed a better infrastructure to develop and make his own wine. He therefore invested in 1990 to create a cellar in Sancerre with a thermo-regulated stainless steel vat room inspired by the installations in Champagne. Production notes

Manual harvest, 40-year-old vines, East-facing slopes. Each grape is sorted upon arrival of the harvest. We work by gravity to respect the natural process of winemaking. We perform a light pressing and only keep the free-run juice and heart of the press. Natural fermentation in temperature-controlled stainless steel tanks with aging on fine lees for 9 months.

Tasting notes

It is a wine with great complexity, dry, fruity, and with a lovely minerality. It is perfect to pair with shellfish, fish in sauce, and ceviche.
