About this winery

In 1987, Pascal, then a breeder merchant, created the brand "Pascal Jolivet". Pascal needed a better infrastructure to develop and make his own wine. He therefore invested in 1990 to create a cellar in Sancerre with a thermo-regulated stainless steel vat room inspired by the installations in Champagne. Product notes

Our grapes come from a vineyard plot located in Saint-Père. The appellation allows the use of two grape varieties for the production of red wine: Pinot Noir and Gamay.

Production notes

The grapes are harvested manually, selecting only the finest bunches. The grapes are sorted a second time in the cellar, ensuring that only grapes are introduced. 100% of the grapes are vinified as whole clusters, in large 45hl conical wooden vats. The maceration is slow, with minimal pumping. This method allows us to infuse the juice rather than excessively extract it, resulting in a more delicate and elegant wine. The wine is aged in French oak vats for 12 months. It is not filtered. Terroirs: clay and flint.

Tasting notes

Fruity and ripe, ÉDITION is a very approachable wine. On the palate, the tannins are firm yet silky, enhancing the structure and balance of this Pinot Noir and Gamay blend. Thanks to its accessibility, this cuvée pairs well with monkfish, penne all'arrabbiata, or rack of lamb.
