Product notes
This wine originates from the Cave Spring Vineyard, nestled on a hillside of the Niagara Escarpment overlooking Lake Ontario, known as the Beamsville Bench. Along this gentle slope, limestone-clay soil, elevation and moderating onshore breezes combine to produce a singular expression of Gamay exhibiting vivid berry fruit and overtones of spice. A long, temperate season with broad diurnal temperature shifts. Gamay ripened over a long window, tending late, producing ample, succulent wines with medium to long-term ageing potential.
Production notes
30-day, whole-berry maceration and fermentation using exclusively indigenous yeast; 30% was bled off the skins by gravity to barrel; ageing for 12 months in neutral oak barrels, 80% 225L and 20% 500L; minimal sulphur additions.
Tasting notes
Colour Bright ruby. Nose Aromas of black pepper, Bing cherry, raspberry, red licorice and clover with hints of anise, cardamom, bay leaf and caramel. Palate Medium in body; firm yet supple up front with juicy black cherry tones; the tannins broaden in the middle, melding with succulent blackberry and red currant fruit along with notes of licorice root and cracked pepper, and giving way to vibrant yet polished edges; the wine tapers and softens to the back, drawing into a smooth, layered finish of ripe blueberry and Damsom plum, caramel, coffee grinds and tobacco.
