Spontaneous fermentation with long maceration on the skins of 15 days in opened vats, with manual breaking of the hat, not filtered and no temperature control. Aging 6 months in steel tanks.
It has an important structure reminiscent of ripe apricots and medlar but also a Mediterranean balsamic that envelops the palate. Determined and welcoming, clean mouthfeel and bright finish. Perfect amber glow stick hue that will be a feast for eyes and palate.
