In 1987, Pascal, then a breeder merchant, created the brand "Pascal Jolivet". Pascal needed a better infrastructure to develop and make his own wine. He therefore invested in 1990 to create a cellar in Sancerre with a thermo-regulated stainless steel vat room inspired by the installations in Champagne. Product notes
Plot selection on 2 hectares of limestone soils located in the villages of Champtin and Bué-en-Sancerre. Organically grown, these old vines produce exceptional grapes and an extremely pure and concentrated juice.
Production notes
"Sauvage" lives up to its name, aged on fine lees (stainless steel tanks) for 12 months, bottled without filtration or chilling.
Tasting notes
This wine is immediately identifiable at tasting thanks to its great freshness, vivacity, minerality, complexity and salinity at the end of the mouth. It should be decanted to let its animal aromas develop.
