Our objective is to produce grapes of the best possible maturity as naturally as possible: Reduction of fertilizers while favouring those that are organic and of natural origin (manure). The prunings are crushed on the ground and mixed with the soil during ploughing in order to restore organic matter to the terroir. The pruning and the management of the vines are carried out in such a way as to spread the vegetation as much as possible over the vine row, so that the bunches are more airy and sunny, which results in a much better maturity. Particular attention is paid to yield control and ripening conditions, so green harvesting and leaf thinning are carried out according to each vintage. Son and grandson of Jean Pabiot, Alain and Jérôme run the Domaine des Fines Caillottes. Planted with Sauvignon grape variety, the estate covers 30 hectares, divided into 30 plots of different sizes spread over 5 communes of the Pouilly-Fumé Appellation. The terroirs, mainly clay-limestone, are therefore varied: caillottes (limestone), marls with small oysters (fossilized flat stones) and flint. This diversity of terroirs gives the estate's wines their aromatic complexity. Our commitment to sustainable development is certified: - TERRA VITIS, for the respect of the environment, of people and of the wines produced. - HIGH ENVIRONMENTAL VALUE (H.V.E. level 3) for the respect of biodiversity and the reduction of inputs. Level 3 is the highest level. This means fewer treatments, at lower doses, favouring the most environmentally friendly products, the programmed abandonment of weed killers and total traceability of our practices.
