Product notes

Metis Sauvignon Blanc was inspired by Pascal Jolivet and his holistic approach to winemaking in Sancerre. By employing a unique and minimalist winemaking style, we are able to create a wine that truly expresses the terroir of Constantia. The name "Métis" refers to the collaboration between the two producers in crafting this great wine. This fusion of philosophies is reflected in the flower on the label, which is a hybrid of the South African Protea and the French iris

Production notes

A pure Sauvignon Blanc that reflects the sense of place rather than the technique. The grapes were harvested starting at 4:00 AM from a selection of six different altitude blocks capable of withstanding the winemaking process. The blocks are a combination of biodynamic, organic, and sustainably farmed vineyards. No sulfur was added during crushing, and fermentation was spontaneous. The wine was aged on its lees for 12 months in a combination of stainless steel tanks and neutral oak barrels, making up 20%

Tasting notes

Brilliant and vibrant in appearance. The nose bursts with aromas of lemon verbena, thyme, and flint. A tangy palate follows, full-bodied and textured. Bold and elegant, with distinct minerality, the flavors of currants, lime, and blackcurrant abound. Expressive and fresh, the wine finishes with a long, crisp finale
