Product notes

This wine originates from the Cave Spring Vineyard, nestled on a hillside of the Niagara Escarpment overlooking Lake Ontario, known as the Beamsville Bench. Along these gentle slopes, limestone-clay soil, elevation and moderating onshore breezes create a terroir of great distinction. Vinified from the finest micro-parcels of mature vines at the estate, the CSV wines embody the highest commitment to quality and authenticity.

Production notes

An 18-hour, whole-cluster skin soak for all lots; barrel fermented 50% in a 3,800L oak cask, and 25% each in neutral 225L and 500L oak barrels at unregulated temperatures using exclusively indigenous yeast; barrel ageing for 12 months sur lie; minimal sulphur additions.

Tasting notes

Colour: Light yellow. Nose: A broad ranging aromas from comb honey, pineapple, yellow plum and candied orange to crême brûlée, almond, ntumeg, wax and lemon drop. Palate: Dry and medium bodied; rich up front, with yellow plum and citrus peel notes; in the middle, extracted grapefruit pith tones, stony textures and polished edges prevail; tense, saline acidity brings lustre throughout, carrying feathery tannins into a generous, refined finish of pine resin, lemon flan, custard and marjoram. This wine goes well with grilled Turbot or Snapper, curried prawns, tempura, onion tart, roasted Cornish hen, pork tenderloin and soft cheeses.
