Product notes
The name “Dolomite” refers to a type of limestone that forms the bedrock of the Niagara Escarpment above our estate. Through erosion, this ancient rock has enriched the soils of our vineyard located on the gentle slopes of the Beamsville Bench. This Pinot Noir bears the mark of its origin. The calcareous clays of our site contribute to the delicate aromas and silky textures that characterize the style of the wine.
Production notes
Maceration and fermentation for 14 days with whole berries, using only indigenous yeasts. 35% of the cuvée was racked from the skins into barrels; 65% was pressed and fed by gravity into barrels. Aged for 12 months: 90% in neutral oak and 10% in French barrels filled for the second to fourth time; sizes: 90% 225 L and 10% 500 L. Minimal addition of sulfites; unfiltered.
Tasting notes
A medium-bodied, harmonious wine; supple attack, chewy tannins and notes of dried cranberry; mid-palate where the tannins refine and tighten, with intense flavors of black cherry and rose water, supported by rounded contours; long and delicate finish, with fine, silky tannins, marked by black raspberry, compote, sage, clove, and crushed pepper.
